Broccoli and Brussels Sprouts with Bacon and Almonds
Serves 6 as a side dish
Ingredients
- 1 head broccoli
- 300g Brussels sprouts, trimmed
- 3 tbsp extra virgin olive oil
- 4 rashers rindless bacon, coarsely sliced
- 1/3 cup slivered almonds
- salt and freshly ground black pepper
Method
Cut broccoli into florets. Cut Brussels sprouts in half. Blanch vegetables by cooking in boiling salted water for three minutes, then drain well.
Heat a large frying pan, add the oil, bacon and almonds and stir-fry for three to four minutes to brown. Add broccoli and Brussels sprouts and toss well overheat to stir-fry for two to three minutes.
Season well with salt and pepper to taste and serve immediately as a vegetable accompaniment.
