Caramelised Red Onions

(Makes 3/4 cup)
Ingredients
- 500g red onions, thinly sliced
- ¼ cup brown sugar
- 65ml red wine vinegar
- 1 tablespoon olive oil
- salt and freshly ground black pepper
- few sprigs thyme
Method
Preheat the oven to 160°C. Combine all the ingredients in a roasting tray. Cover tightly with tinfoil and bake for 45 minutes. Remove the lid and cook for a further 30 minutes, stirring occasionally, until the onions have caramelised. Cool and store in an airtight container in the fridge until ready to use (up to 2 weeks).
