Cheat's Curried Potato and Lentil Stew

Cooking time: 30 minutes
Serves: 4
Ingredients
- 1 onion, peeled and diced
- 1 carrot, peeled and grated
- 1 tablespoons curry powder or paste
- 750 grams waxy potatoes, peeled and cut into chunky pieces
- ¾ cup red lentils
- 400 grams can condensed tomato soup
- ¼ cup tomato paste
- 1 ½ - 2 cups water
Method
1. Brown the onion in a dash of oil in a lidded frying pan. Add the carrot and curry powder and stir only until fragrant. Add the potatoes, lentils, tomato paste, soup and water and bring to a gentle simmer and cover.
2. Cook over a low heat, stirring occasionally for 20-30 minutes or until the lentils and potatoes are cooked. Season with salt and pepper and serve with a favourite relish and Indian breads.
Up-market or change me!
- Add a heaped teaspoon minced ginger and garlic
- Add a handful of desiccated coconut
- Finish with ½ cup coconut milk
- Scatter over chopped fresh coriander when serving
- Fold though 2-3 quartered ripe tomatoes before serving
- Use 500 grams diced chicken and only 250 grams potatoes

Put all the ingredients into a slow cooker and cook on low for about 5 hours.
