Mu Shu Pork with Chinese Pancakes

Ingredients

  • 2 tbsp oil
  • 4 eggs, whisked
  • 3 cups rice
  • 500g shaved pork (you can use any thinly sliced meat)
  • 1 tsp shrimp paste (optional)
  • 3 tbsp soy sauce
  • 5 button mushrooms, sliced
  • 1/4 cabbage, sliced
  • 1 spring onion, white end, sliced
  • 2 carrots, grated
  • 18 Chinese pancakes
  • handful of chopped nuts (optional)

Method

Mu Shu Pork with Chinese Pancakes photo by Vance McPheeAdd half of the oil to pan and heat. Add eggs and season with salt and pepper. Tilt pan while cooking to make a large omelette, and flip if necessary to cook through. Remove from pan. Slice into strips and set aside.

Cook rice according to instructions on packet.

While rice is cooking, add remaining oil to pan and fry meat until browned. Add shrimp paste (if using) and soy sauce (you can add a pinch of sugar if you like it slightly sweet). Add mushrooms, cabbage, spring onion and  carrot. Stir-fry for 5 minutes.

Fill pancakes with meat mixture, omelette strips and chopped nuts (if using) and serve rice on the side.
