Pesto Mash
Ingredients
- 1kg potatoes (Ilam Hardy, Agria, Red Rascal)
- 100g butter
- ½ cup grated Parmesan
- ¼ cup olive oil
- 3 tbsp pesto
Method
Boil and drain potatoes. Mash with butter and oil. Mix through Parmesan and pesto.
