Raita
Ingredients
- 250gm Greek yoghurt
- 1 lime, juice only
- sea salt and freshly milled black pepper (to taste)
- 1/8th Spanish onion, peeled, halved and finely diced
- 6 leaves mint, washed, drained and finely sliced lengthways
- 1 large roma tomato, blanched, peeled, de-seeded and cut into a 5mm dice
- 200gm telegraph cucumber, peeled, de-seeded and cut into a 5mm dice
Method
Place the yoghurt into a suitably sized mixing bowl and whisk until smooth, add the lime juice and stir through, season to taste. Add the onion, mint, tomato and cucumber and stir through until thoroughly combined, cling-wrap, and place in a refrigerator until required.
