Raw Beetroot and Feta Salad
Serves 4 as a side
Beetroot is a wonderful food for boosting energy and supporting digestive health. It is a good source of plant-based iron and contains soluble fibre that is cleansing on the digestion system.
Ingredients
- 2 medium beetroots
- 1/4 cup sunflower seeds
- 1/4 cup raw pumpkin seeds
- 1 tablespoon extra virgin olive oil
- 1 tablespoon lemon juice
- sea salt and cracked pepper
- 100 g goat feta
Method
Remove the greens from the beetroot and peel the skin. Grate into a bowl.
In a dry skillet, toast the sunflower and pumpkin seeds until golden.
Dress the grated beetroot with olive oil and lemon juice and season to taste. Crumble over the feta and sprinkle with the toasted seeds.
Serve immediately.
*Don’t throw away the beetroot greens, they can be used as you would silver beet – steamed or sautéed.
