Raw Vegetable Salad with Salty Goats Feta
Ingredients
- 1 fennel bulb, slivered roughly
- 1 red onion, sliced into 1/8ths
- 4 cloves of garlic, cut into 1/4s or diced up.
- 2 capsicum red and green, torn or cut into small pieces
- 2 baby beets, peeled and slivered very thinly
- 1 small knob of ginger, slivered thinly or diced up finely
- 1 spring onion slivered, cut on the diagonal.
- 2-4 firm sweet vine ripened tomatoes, quatered
- ½ cucumber, sliced in small chunks
- 1 mild red chilli
- 1 cup fresh herbs such as parsley/coriander/chervil/chives- all or some, chopped roughly
- 200 grams goats feta or more (depending on numbers)
- 1 tablespoon capers either in brine or salted.
- flaky salt & pepper
Dressing:
- ¼ cup lime juice/lemon juice/verjuice
- ¼ - ½ cup OliveNZ extra virgin olive oil or your favourite drizzle
Method
Toss all the ingredients together and smother with the simple, healthy and delicious dressing and serve.
If you like, this recipe can be lightly seared for a minute in a wok or heavy pan creating a light stir- fry salad…. But remembering the old adage - raw is best!
