Samaki Harra - Damascus

Ingredients
- 2 fish fillets (snapper)
- 2 sweet chillis
- 1 onion
- 4 garlic cloves
- 1 Tablespoon of cumin
- 1 Tablespoon of coriander
- Salt
- 1 teaspoon of black pepper
- 1 Tablespoon of paprika
- 1 Tablespoon of harissa (or chilli paste)
- 1 Tablespoon of tomato paste
- 1/2 cup of olive oil
- 2 lemons
- 3 chopped tomatoes
Method
- Preheat the oven at 180°C.
- Mix the olive oil, lemon juice, paprika, coriander and cumin. Marinate the fish with this mix. Cover in tin foil and put it in the oven.
For the sauce:
- Sautéed the chopped garlic and chopped onions in a pan with a bit of oil, salt and pepper until they are soft.
- Add the chilli and the tomato paste and mix.
- Add the chopped tomato and the chopped sweet chilli. Cook until soft.
- Remove the fish from the oven and cover with the sauce. Sprinkle some fresh coriander on top.
