Steamed Ginger Pudding
Once you have made this you will amazed at how easy it is to make a steamed pudding in a billy!
There are a variety of methods that can be used. The most traditional would be to use a small billy, empty can or enamel cup resting on a few small pieces of stone inside a larger billy, with water at least two-thirds the way up the sides and the lid on. A much simpler method is to put the mix inside a medium oven bag, fasten it loosely and place in the water. The shape is a little more free form but the pudding cooks really quickly. Ginger pudding is a favourite, especially when served with the fast caramel fudge or ginger sauces, but we’re sure you’ll experiment with steamed pudding recipes.
Serves 4
Ingredients
- 2 tbsp golden syrup
- 50g butter
- 2 tbsp milk powder
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp baking soda
- 1 cup of self-raising flour
- Caramel fudge or ginger sauce (see below), to serve
Method
At home
Mix all the dry ingredients in a medium-sized oven bag. Pack the butter and golden syrup together separately.
In camp
Mix the golden syrup and butter with ½cup warm water so that the butter melts. Add to the dry mix and massage together until well combined. Place the bag into a billy of boiling water and simmer on low for 30 minutes. Carefully take the bag out and open to check the middle of the pudding is firm and not too sticky. Rest for 10 minutes, then serve with caramel fudge or ginger sauce.
Caramel Fudge Sauce
Ingredients
- ½ cup brown sugar
- 1 tbsp butter
- 1 tbsp condensed milk
- A good pinch of salt (optional if you don’t like salted caramel)
Method
Mix all the ingredients together with ¼ cup hot water in a pan or billy and boil for 1 minute until slightly thick.
Ginger Sauce
Ingredients
- 50g crystallised ginger, grated or finely chopped
- ½ cup caster sugar
Method
Mix all ingredients together with ¼ cup hot water in a pan or billy and boil for 1 minute until slightly thick. Perfect for apricots, pears, apples, mango slices, ginger loaf or coconut loaf. Alternatively, try on sago cooked and mixed with coconut milk.
