Tahini Jar Dressing
Makes ½ cup / Takes 10 minutes / Gluten-free + Dairy-free + Vegan
I absolutely HATE throwing away jars that still contain the dregs of expensive products and my favourite way to repurpose them is to turn them into salad dressing jars! I also always keep the liquids that come in my gherkin, jalapeno and pickle jars as these are great for adding to salad dressings and sauces for that extra flavour kick - never throw them away!! This turmeric-spiked tahini dressing is creamy and delicious, perfect for drizzling over roasted vegetables or in a fresh, summery salad like this one.
Ingredients
- 3 tbsp tahini paste, or the remnants in the bottom of the jar to roughly the same quantity
- 3 tbsp boiling water
- 3 tbsp lemon juice
- 2 tbsp olive oil
- ½ tsp ground turmeric
- ½ tsp cayenne pepper
- Salt & pepper
Method
Add the tahini paste and boiling water to a jar, secure the lid tightly and shake until the water and tahini are smooth and combined.
Add the remaining ingredients, secure the lid and shake again until well combined. If you'd prefer a runnier dressing, add more water.
Season to taste with salt and freshly ground black pepper.
Tip: Scale this recipe up and make extra - it'll keep well in the fridge for up to 10 days.
