Vegan Spanish Beans
Serves 4 / Serve with crusty bread, fresh veges or salad
Cook down 1 large red onion and 2 capsicums in plenty of olive oil, salt & pepper. Don't rush this step as it's an important flavour base - let them get well soft and start to caramelise.
Then add 1/2 teaspoon dried oregano & 2t smoked paprika. Stir for 1 minute then add chopped vegan chorizo and 2 cans of butter beans (one can be drained, one with liquid).
Top up with water or vegetable stock and simmer gently for 20-to-30 minutes until the beans are tasty and the liquid is mostly gone.
Add salt if needed.
